The recipe itself is extremely simple and I must confess that the raw-vegan dishes never attracted me because of the long waiting time until you enjoy the finished product. But the taste is the easiest to educate, you just need the will and a simple recipe to start with, which will give you confidence!

In order for my raw-vegan recipe to be completely healthy, I chose to use Green Sugar. Stevia Rebaudiana extract, obtained with hot water, and erythritol, obtained from non-genetically modified corn, through the natural fermentation process, is regenerated only mechanically, without other chemicals. It has 0 calories (which never hurts!) And 0 glycemic index. It is sweet as sugar, but lacks the bitter taste specific to stevia products. Returning to my pudding recipe, all you have to do is put it in a bowl and blend the strawberries and coconut milk. Then I added 6 drops of Green Sugar, 3-4 drops being the equivalent of a teaspoon of sugar.

I added chia seeds, a ratio of 1 to 9, ie 9 tablespoons of coconut milk and strawberry mixture, 1 tablespoon of seeds. I mixed it to homogenize it, I left it at room temperature for 20 minutes, after which I distributed it in individual portions and put it in the fridge.

Initially I said that I will serve chia pudding for breakfast, for a strong start! Of course I couldn't help myself (it's just the first raw-vegan recipe!) And I had to taste one :).

The conclusion? The taste of strawberries and coconut complements perfectly, it is not dominant. The pudding has a pleasant consistency, the seeds are not felt, and our natural sweetener did not influence the taste at all, it will be perfect tomorrow morning.

P.S. It is a perfect recipe during Lent!

I ate this dessert for the first time last summer, in a mega-phyto restaurant in Cannes, called Medusa. I fell in love irretrievably, and since then, I've been trying tapioca pudding recipes with coconut milk, but either it didn't have the same texture or it didn't taste the same.

After many attempts, I succeeded! Finally, I can share with you this recipe for tapioca pudding with coconut milk, which is perfect. The texture, the taste, everything is exactly as I wanted!

I warn you! It's dangerously good!


½ tapioca pearl cane (250 ml cane)

6 tablespoons birch sugar (xylithol)

400 ml coconut milk (must be canned milk because it has a fatter consistency)

Method of preparation:

In a small pot boil 4 cups of water (use the same measure with which we measured the tapioca pearls) When the water starts to boil, add the tapioca pearls and boil until the pearls become translucent (about 12-15 min), mixing continuously, so as not to stick.

Meanwhile, cut the strawberries into cubes and put them in a saucepan with 2 tablespoons of xylithol. Put the pan on medium heat and leave until the mixture starts to boil, stirring occasionally.

After the pearls have boiled, we pour them into a thick sieve and rinse them with cold water.

We open the can of coconut milk and take two tablespoons of the foam on top (the fat of the coconut milk), which we put in a bowl and leave it to cool until we finish the pudding.

Put the milk in a saucepan and add the tapioca pearls and 4 tablespoons of xylithol. Boil stirring constantly, until the mixture begins to thicken slightly. If it still looks liquid to you, don't worry, the starch in the tapioca pearls will clot the contents when it cools down.

In 4 glasses or 2 bowls we distribute in equal parts the strawberry sauce that we prepared, keeping two tablespoons for decoration. We pour tapioca pudding in each glass over the strawberry sauce.

Take the bowl of coconut milk foam out of the fridge, beat it lightly with a fork and place it on top of the dessert, like a whipped cream. Garnish with a teaspoon of strawberry sauce.

I recommend serving cold pudding from the refrigerator. You will fall in love!

  • 150g fresh strawberries
  • 1 frozen banana
  • 4 ice cubes
  • 1 tablespoon of chia seeds soaked in 60ml water
  • 160ml coconut milk

Combine all ingredients in a blender and mix well.
